Bagala Ghatogh

Ingredients:Serving 4 people

  • 14 oz. of fava bean or lima bean or broad bean (1 bag)
  • 2 eggs
  • 4 cloves of garlic
  • ½ cup of dried dill
  • 1 cup of water
  • ¼ cup olive oil
  • 1 teaspoon of turmeric
  • 1 teaspoon Kosher salt or to taste
  • ½ teaspoon pepper or to taste

Directions:

In a medium or large sauté pan over medium/high heat, add olive oil and chopped garlic for few minutes until it becomes golden color in color. Add the dried dill, the bag of bean, salt, pepper, turmeric, and water to the mixture of chopped garlic. Put the lid on and let the mixture simmer for about 10 minutes until all the ingredients are mixed and blended together. Eggs are added at the last minute. Do not stir the eggs, they should look like hard boiled eggs. After the eggs are cooked remove the pan from heat and served it with white rice.
