Halva (Halwa, Halvah, Halava, Helva or Halawa)

Ingredients for Serving 6 to 8 persons

  • 1 cup of sugar
  • ½ cup of water
  • ½ cup of Rose water
  • 1 teaspoon of Saffron (powdered)
  • 1 cup of vegetable oil or olive oil or 2 sticks of butter
  • 1 ½ cups of white flour or wheat flour
  • Pistachios, blanched slivered almonds, or chopped nuts (decoration)

Direction – Sugar Syrup:

In a small saucepan over medium heat bring the water and sugar mixture to boil. Stir until all
the sugar is dissolved and then add the rose water and saffron. Cover the syrup and remove it
from heat and set it aside.

Direction – Flour:

In a large saucepan over low to medium heat sauté the flour while continuously stirring. After a few minutes, add the oil to cook the flour. When the flour is cooked, its color will change to golden brown. Once the color is golden brown, add the syrup slowly while continuously stirring. The color will change again this time to a dark shade of brown and the consistency of the halva becomes like paste. This step takes about 10 minutes. Pour the halva into a plate. For decoration add the chopped nuts, pistachios, and almonds on top of the halva. Cover and chill.
