Zeytoon Parvardeh

Ingredients for Serving 4-6 people

  • 1 cup of firm green pitted olives
  • ½ cup of grated walnuts
  • ½ cup of pomegranate seeds
  • ¼ cup of pomegranate molasses
  • 3 minced garlic cloves
  • 3-4 tablespoons of olive oil
  • A handful of chopped fresh mint, or 1-2 tablespoons of dried mint
  • Salt and pepper to taste


In a blender, ground the walnuts into a paste and smooth consistency. In a medium sized bowl combine the olives, minced garlic, pomegranate seeds, pomegranate molasses, olive oil, and grated walnuts. Add salt and pepper to taste. Add the fresh mint or dried mint and mix thoroughly. Refrigerate for a couple of hours.
